Savory Paninis with a Rugged Twist
Every one of our epic adventures is fueled by good company and tasty meals. Cooking in the backcountry comes with its challenges, so it's important to plan your meals in advance. No one wants to deal with the hangry vibes brought on by forgotten snacks!
Our family started with very basic recipes, but quickly grew tired of the limited options. We started thinking outside of the box and began putting creative twists on some classics. Say hello to the glamorous grilled cheese, otherwise known as the Backcountry Panini. There are a million variations of paninis out there, so you don't have to worry about this meal getting boring. Plus, kids LOVE them!
Backcountry Salami & Sharp Cheddar Panini
Ingredients:
8 slices artisan bread, sliced (we love garlic and cheese)
4 slices of sharp cheddar cheese
16 slices of thinly sliced salami
olive oil

Directions should always be short and to the point.
Preheat your cast iron pan to medium heat.
Spread a thin layer of olive oil on one side of each slice of bread. Flip bread over to avoid getting oil on your surface.
On four slices of bread, stack the salami and sharp cheddar in that order. Flip the remaining slices of bread oil side up on top to complete the four sandwiches.
Add the sandwiches one or two at a time (depending on how big your pan is) with the cheese layer towards the cast iron pan. Firmly press down for 5 seconds and leave it to cook for approximately 2 minutes, or until golden brown on the outside and the cheese is melted on the inside. Flip the bread to grill the other side.
Pro tip - ask the bakery to slice your bread for you. They will do it for FREE!
